Noriko Takiguchi: Sushi Lesson Number 5

This may be surprising, but you should dip the fish side, not the rice, into the soy sauce...
When you touch the soy sauce with sushi, it has to be quick, almost like a fish jumping up from between the waves.

How to get fish to eat sushi properly, part 6

Grasp a small piece of sashimi firmly between the left thumb and index finger. With your right hand, work the fishhook through the sashimi lengthwise. Make sure that the barb clears the end of the sashimi. Now, with your left hand, gently push the other end of the sashimi towards the barb, so the sashimi bunches up in the curve of the hook. Dip in shoyu.

If you're noodling for catfish, knead some rice into a ball. Add shoyu if the rice is too dry. Now gently make a fist around the rice ball, and with your other hand, rub wasabi all over the outside of the fist. Squeeze until the rice just starts to ooze out between your fingers.
